Notes on a menu

What the card admits

A printed menu is evidence. Section counts, the gaps between prices, and the words a kitchen chooses all say what it can actually do. Here is what three sheets from 17th Cross say.

Note 01

Breakfast, eggs, bowls

Six breakfasts, and none of them share a base.

Vegan Veg is built on tofu and baked beans. Farmers is carrot, beans, mushroom, broccoli and paneer. Protein is chicken sausage, salami and breast for ₹479. American and English each get their own composition. That is six separate prep lists before the eggs section even begins — and eggs run ten deep, from a ₹125 sunny side up to a ₹240 mushroom cheese omelet.

Note 02

The brew bar

Three brew methods is a staffing decision.

V60, AeroPress and French press — each hot or cold, each with a line of copy explaining what the method does to the coffee. A cafe only prints that when somebody behind the counter can be trusted to execute all three, and wants you to understand the difference.

The pricing confirms it. AeroPress ₹215 against cappuccino ₹180: the gap is the labour of one hand-brewed cup, charged for rather than absorbed. Around it, five cold brews and five continental preparations — Turkish, Mexican, Hong Kong, Portuguese, Vietnamese.

Note 03

Mains

Two Meze platters is not an accident.

One vegetarian at ₹370 — pita, lavash, falafel, hummus, tzatziki, baba ghanoush, grilled paneer, marinated olives. A second at ₹449 that swaps in kibbeh and tuna. The second only exists because the first sells.

The same instinct sits in confit chicken, and in a mushroom risotto held at ₹280 — a low price for a dish somebody has to stand over and stir. Bolognese is made with minced lamb, not beef, and at ₹499 it is the most expensive plate on the card.

Note 04

The long day

Eggs in the morning, mojitos at eleven.

A room that opens for breakfast and closes at 11:30 PM is running two services out of one kitchen. That also explains the back half of the drinks sheet: six mojitos, three boba, nine ice teas, seven smoothies. People sit here after dinner, not only before work.
